Do like, share and subscribe to AmitasMejwani - https://www.youtube.com/c/AmitasMejwani FB Page - https://www.facebook.com/amitamejwani/ Other Recipes- Egg Paratha Recipe - https://youtu.be/UqXs7IlNPOw Plain Paratha Recipe - https://youtu.be/tXWNJe8jkOs Pudina Chutney- https://youtu.be/yRgYMMiIbN0 Spring Onion/ kandyachi paat bhaji- https://youtu.be/qhC8o9-LgvY Preparation Time – 30 mins Serving – 2 to 3 people Ingredients:- • 4 eggs • 2 cup finely chopped onions – I have taken approx. 4 medium size onions • 1 cup finely chopped tomatoes – I have taken approx. 2 medium size tomatoes • ½ cup finely chopped coriander • 8 to 9 Curry leaves • 1 tea spoon ginger garlic paste • ½ table spoon red chilli powder • ½ tea spoon turmeric powder • Green chillies - Optional • Salt as per taste • Chilli flakes - Optional • Oregano - Optional • Black pepper powder • 2 to 3 table spoon cooking oil Method of cooking:- 1. Heat up the pan, add oil, add curry leaves (If you like spice, you can even add finely chopped green chillies) add chopped onions, stir it well until it turns slightly pinkish and now add chopped tomatoes, mix it well. 2. On medium gas flame you need to cook/steam the onion and tomatoes for 4 to 5 mins by covering the pan with the lid. 3. After 4 to 5 mins you can see the onions and tomatoes are cooked, if you want you can even sprinkle water from the top 4. Add turmeric powder and ginger garlic paste, mix it well. 5. Add red chilli powder and salt. Mix it well so that chilli powder and salt gets mixed properly with the onions and tomatoes mixture. 6. Firstly, you need to spread the mixture across the pan and make four circle (space) from all the four sides. Note – We have created this space for the eggs. We need to put the egg in each of this circle/space. 7. Add salt, black pepper, coriander, oregano and chilli flakes from top. Now on slow flame let the eggs set and fry properly. 8. If you like half cooked/half fired egg, you can have the egg as it or if you prefer the full fired egg you can slowly flip the egg to be fired from the other side as well. 9. This egg masala recipe goes well with bread, pav and chapati. Happy Cooking!!'
